Internship program at Institute of Democracy ● Mari Kakhidze

"My first dish that I made on my own was Ajarian khachapuri," says Mari Kakhidze, who is the youngest participant of the internship program of Institute of Democracy. Today, Mari has already professionally prepared her favourite dish in the kitchen of "Batumarano" restaurant.

Before coming to the Institute of Democracy, Mari tried many places to master the art of cooking, although regrets that she did not have the chance to get practical experience elsewhere. The knowledge gained through theory was not enough.

Mari considers this internship course very useful. As she tells, learned a lot of new things from the chefs of the restaurant: including the techniques of making puff pastry and aromatic sauces, new dishes: soup with festili (fruit leather), special meal "Gvirila"(Chamomile)... Every day of the internship, she brings a notebook with her and carefully notes all the recipes. She says that the possibilities of a cook are limitless and thinks that the development of a traditional cuisine and the interest of foreign gourmets in Georgian cuisine can be achieved in many directions. The idea of designing dishes, combining old and new flavors is particularly fascinating for her and she hopes that, like famous chefs, she will also do her best.

Mari inherited culinary talent from her father. A gourmet family has delicious plans, father and daughter want to jointly start a food business.
